When Wim was 15 years old, he went to culinary school Ter Groene Poorte in Bruges to become a chef. After a few internships and lots of weekend work he learned cooking from Alain Lefevere, the formal chef at Brasserie César in Kortrijk. During his many trips to all corners of the world, the adventure to do his own thing in a special place never went away.
And that urge never went away, on the contrary ... After 7 years of taking Spanish evening classes (where Guillermo turned out to be Spanish for Wim), it was time for action!
